Barbecue--a word that fits many different cooking techniques--in
the South means slow-cooked pork or beef (with chicken
only grudgingly admitted). Beyond that are a raft
of sauces and rubs; of accompaniments and quaffs.
Most folks go for beer. But we insist wine is a
great companion for barbecue, provided the sauce
isn't scorching hot. Join us for an exploration
of wine with barbecue as we understand it in the
South. Although you might find included in this
